The dirty Majorcan is no less than the island’s traditional paella specialty. The dirty in the title comes from the fact that this is a dish packed with meat; not neat cubes of bit size chunks, but on the bone: rabbit, chicken, pigeon, pork spare ribs. You have to get dirty eating this one and it’s a dish best shared with good friends – not one to try out on a first date perhaps.
