Our wedding catering season started early this year with Stevie and Craig’s wedding in January at the Lobster Shack in Whitstable. It was the weekend in January when we had heavy snowfall in Sussex and almost ten centimetres of snow fell the day before their wedding. The Lobster Shack is right on the seafront in Whitstable and Stevie had chosen to treat her guests to our lobster paella to pay homage to its heritage.As guests washed down oysters with chilled champagne, we prepared their tapas – pea and mint tapenade on crostini; embutido of jamon, chorizo, lomo and salchichon; and pan de tomate – that delicious tapas that’s often served as breakfast in Andalucia. After the ceremony, the bride and groom stepped out onto the seafront for photos of what was almost a white wedding, while we started cooking our paellas.The lobster and seafood paella certainly drew a crowd as guests came to watch the spectacle. The aroma and sound of the sizzling squid and king prawns was fantastic as we flambéed them in our metre-wide paella pan. But the pièce de résistance was when we added the lobster to the paella. And a nice touch was that it was native lobster from our local shores.
When the paellas were ready, we served them onto elegant vintage plates, which Stevie had hired from our sister company, Vintage Plate Hire.
