We are having three tastings this week for weddings next year. Clients come to our home to try out a range of tapas and paellas. We cook these in our smaller paella pans so we can prepare three different paellas for one sitting.
This week we’re preparing monkfish, mussels, squid and prawns for one paella which is a classic recipe. Monkfish is such a firm and succulent fish that it’s perfect for paella as it doesn’t lose its integrity. The second is one of our most popular vegetarian paellas with wild mushrooms, asparagus and toasted hazelnuts.
While a vegetarian paella is something that older Spaniards might turn their backs on, it is a dish that is becoming more and more popular with the younger Spanish population. And with our fresh ingredients locally sourced from Sussex, it really makes a delicious dish.
We always recommend having one vegetarian paella at a party as you’ll be surprised how many guests want to try it along with our meat and seafood paellas.
